Garlic (Allium sativum) has long been used as a spice in cooking Indonesian society as well as other communities in different parts of the world for its distinctive aroma. Recently, the use of garlic not only as a flavor ingredient, but it is also used as an ingredient that can affect health.Over 1000 scientific publications in the last decade has shown that garlic is one of best foods to prevent disease.
In April 2005, International Symposium of Research at Georgetown University, USA, on “The influence of garlic and components against cancer and cardiovascular disease.” The event is followed by researchers worldwide with garlic. Findings of new benefits of garlic as a medicine are discussed drawing on this forum. Some of these results and a number of review articles are dipublikan this forum in the Journal of Nutrition in March 2006 issue.
